Survey time.  If I ask you to picture in your head a pizza crust, how many of you think of one that is made from dough?  And how many of you think of one that is made from zucchini?  I’ll bet lots of money that everyone thought of a regular dough crust.  I’m not a big fan of regular pizza dough and because of that I’ve tried a lot of different gluten free crusts; this recipe is the most unique and best tasting of them all.  It doesn’t take more time to prepare and doesn’t make use of any flours, gluten free or otherwise.  My husband also really likes it but he still ranks it #2 to his favorite traditional Neapolitan thin crust pizza.  :)  This zucchini crust benefits from the use of very good quality mozzarella and Parmesan cheese both of which can be had at a great price from Costco.  This recipe has been adapted from a gluten free crust from the blog kalynskitchen.

Ingredients
  • 4 cups zucchini, shredded using a grater
  • ⅓ cup mozzarella, shredded (regular pizza topping mozzarella)
  • ⅓ cup Kirkland Parmesan Reggiano cheese, shredded
  • ⅛ teaspoon garlic powder
  • ¼ teaspoon dry oregano
  • Kirkland sea salt and fresh ground Tellicherry pepper to taste

Instructions
  1. Preheat oven to 480F
  2. Place the shredded zucchini into a microwave safe bowl and microwave on high for 6 minutes.
  3. Place the zucchini into a mesh strainer and allow all of the liquid to drain and the zucchini to cool.
  4. When cool enough to hold in your hands, put the zucchini into a cheese cloth or triple paper towel and squeeze out any remaining liquid as we want it very dry.
  5. Mix the dry zucchini with mozzarella, parmesan, egg and spices.
  6. Place our pizza crust mixture onto a baking pan that has been lined with parchment paper and press down to create a flat, circluar shape.
  7. Pre-bake the crust for about 12 minutes, or until golden, then remove from the oven.
  8. Now the crust is ready to top with items of your choice, and then bake another 5-6 minutes or until the ingredients are cooked and cheese is melted.
  9. For the feature picture I made two pizzas, one a variation of the classic Margherita pizza with fresh Buffalo mozzarella cheese from Costco, tomato and fresh basil. The second pizza was with mushroom, spinach, jalapeno pepper and Kalamata olives from Costco.
