Wild Rice & Orange Salad
This is a fresh and light salad which is also very nutritious. It works great as a healthy lunch and also pairs well as a side with BBQ meat or seafood; we served it with our grilled shrimp with garlicky tomato glaze. My husband categorized it as his favorite kind of dish “Nutrish & Delish” – the recipe was adapted from a recipe in the magazine Quick & Healthy 30 minute meals.

Ingredients
For the salad
- 3 cups cooked wild rice (wild rice typically takes 30-60 minutes to cook so plan accordingly)
- ¼ cup Kirkland dried cherries or cranberries
- ¼ cup Kirkland pine nuts, roasted
- ¼ cup chopped mint
- 2 tablespoons green onion, chopped (include white parts)
- Kirkland sea salt and fresh ground Kirkland Tellicherry pepper
For the dressing
- 1 tablespoon Kirkland pure maple syrup
- 1 tablespoon of orange zest
- 2 tablespoons fresh squeezed orange juice
- 2 teaspoons Dijon mustard
- ¼ cup Kirkland extra virgin olive oil
Instructions
- In a small bowl whisk together all the ingredients for the dressing and set aside.
- In a large bowl mix together the rice, cherries, pine nuts, mint and spring onion.
- Pour the dressing over the salad, give it a good stir and season with salt and pepper to taste.
