West African Groundnut Stew

The last few days have been particularly cold here in Calgary, and these types of days are best for either a comfort food, or a nice spicy and flavorful dish. This sweet potato based stew fits the cold weather day bill and has a loads of good things going for it. It is bold in flavor, has lovely aromas from the spices, a creamy texture from the nut butter, wonderful color, it’s nutritious, vegetarian (vegan too!) and has just the right amount of spicy kick! Note: I’ve adapted this recipe from Alive magazine.

Ingredients

Instructions
  1. Prepare the vegetable broth.
  2. In a deep sauce pan over medium heat, add the broth, onion, garlic and ginger and simmer for 10-15 minutes.
  3. In a stainless steel (or other heatproof bowl), mix together the almond butter and tomato paste. Add 1 cup of the broth from the sauce pan and mix everything until smooth.
  4. Add the paste mixture into the deep sauce pan, mix.
  5. Add the sweet potato, chickpeas, Swiss chard, paprika, coriander, cayenne, salt, pepper and cinnamon.
  6. Bring to a simmering boil and then cover, reduce the heat and continue to simmer until the sweet potato pieces are tender.
  7. Serve the stew into bowls and garnish with cilantro and ground peanuts.
