Vegetable Cheddar Bacon Soup

Our eldest daughter recently received braces for her teeth and had to have a soft food diet for the first few days. The newness of the braces and the soft food diet put her in a bit of a sour mood so to cheer her up I prepared a soup which features bacon (one of her favorite things) and some of her favorite vegetables. Feel free to switch vegetables as per your likes or what you have available. You can use sweet potatoes instead of regular, or celery instead of the celery root etc. Don’t be afraid to experiment.

Ingredients
  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • ½ cup celery root, chopped
  • ½ cup parsnip, chopped
  • 1 cup butternut squash, peeled and chopped
  • 1 cup potatoes, peeled and cubed
  • 2 cups broth, chicken or vegetable
  • 1½ cups sharp cheddar cheese, cut into small cubes (Costco offers Balderson 2yr and 5yr old cheese at the best price I’ve found)
  • ½ cup heavy cream
  • 2 teaspoons Kirkland extra virgin olive oil
  • Kirkland sea salt
  • fresh ground Kirkland Tellicherry pepper
  • chopped Italian parsley for garnish
  • 8-10 slices of bacon, chopped and fried

Instructions
  1. In a pan over medium heat warm oil, fry the onion until translucent.
  2. Add the rest of the vegetables and fry for a few minutes.
  3. Add broth so that the vegetables are covered. If not covered add more broth, or water.
  4. If using a non-salted broth, add some salt, starting with ¼ teaspoon and adjust as needed.
  5. Simmer for approximately 15 minutes or until the vegetables are soft.
  6. When ready add the soup into a blender and blend until smooth.
  7. Transfer back to the pot, add the cream and 1 cup of the cheese.
  8. Re-heat on low, but do not bring to a boil.
  9. If the soup is too thick for your liking, add more broth or water.
  10. Season with salt and pepper to taste.
  11. Prior to serving garnish with the bacon bits, the remaining cubed cheese and fresh parsley.
