Valentine’s Panna Cotta with a Hint of Mint

Valentine’s Raspberry Panna Cotta with a Hint of Mint
This is a really yummy dessert, is super easy to make and by utilizing a silicon mold in the shape of heart, it is perfect for your romantic Valentine’s Day dessert. Any time a recipe calls for vanilla I always prefer to use pure vanilla instead of the artificial kind however the pure vanilla typically found in a supermarket is extremely expensive. Here again Costco provides a top quality ingredient at a super price – Kirkland Signature Pure Vanilla with a price that is on average 7X cheaper.

Recipe type: Dessert
Serves: 2
Ingredients
- silicon mold(s) in the shape of a heart
- ¾ cup whipping or heavy cream
- 1 teaspoon gelatin
- bag of mint tea
- ½ teaspoon Kirkland Signature Pure Vanilla
- 1 teaspoon sugar
- fresh mint for garnish
- raspberry syrup
- optional fresh raspberry for garnish
Instructions
- Brew the mint tea in approximately ¼ cup of boiling water. The longer the tea steeps for, the more intense the mint flavor will be, I did mine for about 45 seconds.
- Next dissolve the gelatin in the ¼ cup of mint tea.
- In a bowl add together the sugar, vanilla, your mint tea and the cream. Mix and then pour into your heart shaped silicon mold(s).
- Place in the refrigerator for at least three hours to allow it to set.
- When you are ready to serve the panna cotta, for easier removal from the silicon mold, place (float) the mold into a bowl of hot water for a few seconds, then pop out the dessert onto your serving plate.
- Garnish with a fresh mint spring, the raspberry syrup and optionally the raspberry.
- (This recipe will create 2 heart shaped panna cotta that are ½ cup each.)
