  • 2 eggs
  • 8-10 slices smoked salmon (Costco offers the thin slices of smoked salmon at great prices)
  • 2 tablespoons whipped Philadelphia cream cheese (Costco offers cream cheese but not in whipped form. I highly recommend using the whipped as it is much easier to deal with – the regular cream cheese is very difficult to spread without destroying the omelet.)
  • Kirkland salt and pepper
  • 2 teaspoons chopped dill
  • Green salad mix

  1. In a small bowl lightly beat one egg with a fork until it is mixed.
  2. Add a small amount of salt and pepper, ½ teaspoon of chopped dill and ½ tsp of water.
  3. The key with this recipe is to use a big enough, but not too big, frying pan. A 12″ pan works best. Heat the frying pan until it is hot and then lightly spray with cooking oil.
  4. Pour egg mixture in to the pan and quickly tilt the pan at angles until the egg mixture is evenly spread all over the pan.
  5. When the omelet is almost cooked, flip to the other side. (I use my fingers to grab it at the edges and flip. If that is too hot for you, carefully use a spatula to flip it so it doesn’t tear)
  6. After 10 seconds on the other side, take it out of the pan and spread 1 tablespoon of cream cheese over the omelet.
  7. Sprinkle with ½ teaspoon of dill, cover with salmon and roll into logs. Repeat with the second egg. Cut in half and serve on top of a green mix (optional)
