  • 1 lb ground chicken
  • ½ cup sweet Thai chili sauce (Costco offers large bottles of Thai Kitchen Sweet Chili sauce at a great price)
  • 1 tablespoon fish sauce
  • 2 tablespoons + 1 teaspoon spring onion, chopped
  • 2 tablespoons cilantro, chopped
  • 4 cups iceberg lettuce, chopped
  • 1 cup of cucumber, cut into half moons
  • ¾ package vermicelli noodles

  1. Place the vermicelli noodles into a big bowl and cover with boiling water. Cover and let it sit while the rest of the meal is prepared.
  2. Heat a wok (or big frying pan) over high heat and then put the chicken in and fry until chicken is almost cooked.
  3. Next add 2 tablespoons of spring onion, the chili and fish sauce and fry for another 2-3 minutes.
  4. Drain noodles and divide them between 4 plates. On each plate top the noodles with the lettuce, cucumber and meat.
  5. Lastly sprinkle with extra spring onion and fresh cilantro. For an extra kick you can add some chopped Thai chili.
