Sweet Blueberry Breakfast Rolls

Our girls had friends over for a sleep over and as a breakfast treat I wanted to make them fresh breakfast rolls. They love cinnamon rolls but I had a large basket of organic blueberries from Costco and I decided to use some of them for a jam. When the girls woke up they went from having very sleepy eyes to seeing the rolls and having wide open eyes. The rolls went fast!  (This recipe was adapted from averiecooks.)

Ingredients
For the dough

  • 2 tablespoons butter (soft)
  • 1 cup berry jam (I prepared my own jam using sugar and organic blueberries from Costco. They also have frozen organic blueberries if fresh are out of season.)
For the glaze

Instructions
  1. Place all the ingredients in your bread machine and choose a Dough setting. If you don’t have a bread machine, in a bowl mix all the ingredients except the milk and vanilla. Then add the milk, vanilla and mix. Work with the dough for about 10 minutes. If it is too sticky add more flour.
  2. When the dough no longer sticks to your fingers, form a ball and place it in another bowl that has been lightly coated with oil. Cover with plastic wrap and place in a warm spot in the kitchen. Allow it to double in size.
  3. On a flour dusted counter top, roll out the dough into a rectangle approximately 30X45cm (18X12 inches)
  4. Spread the butter over the entire surface of the rectangle.
  5. Spread the jam over the surface of the rectangle but leave about a 1 cm edge.
  6. Starting from the long side, roll up the dough tightly.
  7. Slice the roll up in 2-3 cm wide segments.
  8. In a baking pan covered with parchment paper, place the rolls cut size down.
  9. Cover the pan with plastic wrap, place in a warm spot of the kitchen and allow it to rest and grow for approximately 1 hour. Alternatively you can place it in the fridge overnight so that you can prepare it in the morning.
  10. Pre-heat the oven to 350F (If you left it in the fridge overnight, place the rolls on top of the oven to allow them to warm.)
  11. Bake the rolls for 25-30 minutes or until golden brown.
  12. Remove from the oven and allow to cool.
  13. Prepare the glaze by mixing all the ingredients together in a bowl.
  14. Drizzle the glaze over the warm rolls and watch your kids devour them!
