Steel cut oats porridge with apple, cinnamon, flax and chia seeds

A lot of people don’t enjoy porridge (oatmeal), and with good reason!  Rolled or quick oats porridge has the consistency of a pile of goop.  However, steel cut oats are an entirely different story as they still retain some “pop” to them and they are nuttier tasting, all of which leads to a much more pleasing bowl of oatmeal.  And of course porridge is extremely healthy and a great way to start your day.  This bowl of steel cut oats porridge goes even further and is what I consider a super-breakfast.  Thanks to the additional flax and chia seed, it’s absolutely loaded with omega 3, in excess of 10 grams and is packed with fiber.  It also uses coconut palm sugar which is tastier and much healthier than regular sugar and has a lower glycemic index.

Ingredients
  • 1 cup water
  • dash of Kirkland sea salt
  • ⅓ cup steel cut oats (I used Bob’s Red Mill organic steel cut oats)
  • 1 organic apple, cut into cubes (apples are part of the dirty dozen – so eat organic whenever you can)
  • ½ teaspoon cinnamon
  • 2 tablespoons ground flax seed (Costco sells CanMar Golden Roasted, cold milled flax seed at a great price)
  • 1 heaping tablespoon of soaked chia seeds (Costco sells C&F chia seeds – simply soak 1 tablespoon of seeds in ⅓ cup water for 10 minutes)
  • 2 tablespoons pure coconut palm organic sugar (available at Costco)
  • ¼ cup of milk

Instructions
  1. In a small pot bring the water to a boil and add then add the salt
  2. Add the steel cut oats, stir and then reduce the heat to low so as to maintain a simmer.
  3. Partially cover and simmer for 15 minutes. Watch that the porridge doesn’t start to boil over and stir occassionally
  4. When there is about 4 minutes left, add the apple and cinnamon and stir
  5. In your serving bowl, add the flax seed, soaked chia seeds and palm sugar and stir together.
  6. Now add the cooked porridge with apples and mix everything together.
  7. Top with a quarter cup of milk and enjoy!
