St Patrick’s Day Pistachio Cheesecake

It’s only relatively recently that many of the lesser known Western holidays like St. Patrick’s Day, Halloween etc. have become popular with the younger generation in Poland.  My first experience with St.Patrick’s Day was eleven years ago in Chicago.  They turned the Chicago river green, there was green beer in the pub, people dressed in green, it was great!  If you love pistachios and cheesecake, you’ll probably think this cheesecake is the perfect match for St. Patrick’s Day.

Recipe type: Dessert
Serves: 8-12

  • 1½ cups of chocolate cookie crumbs (I used Mr. Christie’s Chocolate wafers and crumbled them)
  • ½ teaspoon Kirkland Signature Pure Vanilla
  • ⅓ cup melted butter
  • 2 package(8oz each) Philadelphia cream cheese
  • 1 package of pistachio pudding mix
  • ¾ cup of sugar
  • 3 eggs (Costco sells organic eggs at a great price)
  • ⅓ cup of half and half cream
  • 1 cup crushed unsalted pistachios

  1. Pre-heat your oven to 360F
  2. Crumble the chocolate wafers into a mixing bowl.
  3. Mix the crumbs with the melted butter and vanilla.
  4. Press the crumb mixture into the bottom of 9-inch baking pan.
  5. With an electric mixer, mix the cream cheese with sugar until it is blended.
  6. Now add in the pudding mix, half and half and eggs, one at a time, mixing on low speed until blended.
  7. Pour the cheesecake mix over the crust and then bake in a water bath for about 1 hour or until the center of the cheesecake does not wobble when gently shook.
  8. Remove the cheesecake from the oven and allow it to cool at room temperature for a while, and then place in the fridge for at least 6 hours.
  9. Before serving sprinkle cheesecake with pistachio nuts.
