Squash & Leek Soup with Chorizo Chips

We had Spanish tapas the other night and I was craving for having soup as one of the dishes. I didn’t have a recipe ready to go but with Spanish flavors on my mind I started hunting in my kitchen for the right ingredients. I discovered some leek sitting in the fridge which was screaming to be used, and there was some butternut squash that was waving to me from a kitchen counter top. We also had some extra russet potato from our salted cod dish and one lonely chorizo in the freezer. With those as my main ingredients and with the addition of a hint of smoked paprika and the aroma of saffron, I created this excellent soup. It’s always satisfying when experiments turn out well. :)

Ingredients
  • 1 cup butternut squash, peeled and cut into cubes
  • ¾ cup leek, sliced (white part only)
  • 1 big russet potato, peeled and cut into cubes
  • ½ teaspoon smoked paprika
  • 3 cups of chicken broth
  • ½ cup of cream
  • Kirkland sea salt
  • Fresh ground Kirkland Tellicherry pepper
  • pinch of saffron
  • 1 Chorizo sausage
  • 2 teaspoons Kirkland extra virgin olive oil

Instructions
  1. In a deep frying pan over medium heat warm the oil and then add leek. Fry for 2 minutes.
  2. Add the butternut squash, followed by potato and smoked paprika. Fry for another 2 minutes.
  3. Add the broth, sprinkle with saffron, salt and pepper to taste. Cook for 15 minutes or until the vegetables become soft.
  4. While the soup is cooking, prepare chorizo chips by cutting the sausage into very thin slices (like potato chips). It’s helpful if the chorizo is frozen when you do this.
  5. Warm a small frying pan over medium heat and fry the chorizo chips for 3-4 minutes, or until crispy.
  6. When the vegetables in the soup are ready, remove the pan from stove, add cream and mix in and then transfer into the blender. Blend until smooth.
  7. Season with extra salt and pepper if necessary.
  8. Pour the soup back into the pot and reheat. Serve topped with chorizo chips.
