Sprouted Bean Trio Salad

It’s so great that Costco carries truRoots products. You get the quality of a truRoots organic product at a Costco price which is right in line with my motto of a “Champagne lifestyle on a Costco budget.”  One of the truRoots products at Costco is the Sprouted Bean Trio, which is a mix of lentils, adzuki and mung beans. They go together really well and truRoots even has an easy to make salad that’s pretty good; it forms the basis for this recipe here. I’ve modified it to include some feta cheese and I’ve increased the other ingredients significantly as the original recipe was really lacking some flavor punch.

Ingredients
  • 2 cups truRoots organic sprouted bean trio
  • 1¼ cups of fresh chopped Italian parsley
  • 1 cup cucumber, peeled and then diced
  • 6 tablespoons green onion, thinly sliced
  • 7 tablespoons Kirkland extra virgin olive oil
  • 1-2 large lemons, juiced (get at least 4-5 tablespoons of lemon juice)
  • 1 teaspoon ground cumin
  • Kirkland sea salt to taste
  • Feta cheese for topping (we use lots, ½ cup or more!) Costco carries feta at a great price.

Instructions
  1. Combine the 2 cups of beans with 5 cups of water in a medium to large pot and bring to a boil over medium high heat.
  2. Reduce the heat to low, cover and continue to boil for 5 minutes.
  3. Turn off the heat and leave the beans to soak in the water for another 10 minutes.
  4. Drain the beans, uncover to cool and set aside.
  5. In a large bowl combine all the remaining ingredients, except the salt. Toss.
  6. Add the beans and again toss.
  7. Season to taste with salt.
  8. Serve in a bowl topped with feta cheese.
