Spicy Italian Sausage & Squash Soup

On cloudy and cool days nothing tastes better than something warm and spicy. With a friend in town we wanted to visit and not spend too much time cooking but still have something yummy that would act as an antidote to the dreary weather outside. This soup was a perfect choice as it is silky, sweet and the spice from the chili flakes definitely warms things up! I served this with baguette slices topped with olive oil, olives, tomatoes and parmesan which were then toasted on a pan in the oven.

Ingredients

Instructions
  1. Remove the sausage from the casing into chunks. (This isn’t required but is recommended.)
  2. In a heavy enameled french oven (or large pot) over medium heat brown the sausage in 1 tablespoon of the olive oil until cooked.
  3. With a slotted spoon remove the sausage and drain it on a paper towel and set aside.
  4. In the drippings plus another tablespoon of olive oil, fry the onion and garlic until soft, approximately 5 minutes.
  5. Increase the heat to medium high and add the squash and chili flakes. Saute for 5 minutes.
  6. Add in the 3 cups of broth and bring to a boil. Reduce the heat to a simmer until the squash is soft, approximately 10 minutes.
  7. Once the squash is done, add the soup in batches to your blender. Blend until smooth and add to a bowl temporarily until all is blended.
  8. Add the soup back to the french oven and add the bell pepper, cream, sage and sugar. Simmer until the bell pepper is tender, approximately 5 minutes.
  9. Stir in the brandy and sausage and simmer until the sausage is warmed again.
  10. Add in the spinach and simmer until wilted.
  11. Season to taste with salt and pepper.
