Spicy carrot fritters – Gluten Free

The inspiration for this recipe comes from one of the older of my 75 or so cook books – “Bills Open Kitchen”  However Bill served his carrot pancakes with scallops and a yogurt dressing as a main course. I decided to change things up and serve these on their own as an appetizer.  I also try to eat as much gluten free food as I can so these have substituted gluten free flour for the wheat flour.  These little fritters are really tasty and pretty addictive, my husband went and filled his tummy with them before our main course!  Note that if you use a Thai pepper, these will have a medium to medium hot level of spiciness.

Ingredients
  • ½ cup gluten free flour (I used Bob’s Red Mill – use regular flour if you prefer)
  • ½ cup soda water
  • 1 egg lightly beaten
  • ¼ teaspoon cumin powder
  • ¼ teaspoon coriander powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon Kirkland sea salt
  • 1 small Thai chili, seeded and chopped
  • 1½ cups grated carrot
  • 8 spring onions, sliced
  • ½ cup chopped cilantro
  • ¼ cup vegetable oil
  • 1 tsp sugar

Instructions
  1. In a bowl mix together the flour, soda water and egg.
  2. In a big bowl mix together the spices, Thai chili, carrot, onions, sugar and cilantro and mix well. Add the flour mixture into the carrot mixture bowl and mix.
  3. Heat a frying pan over medium high heat, add the oil and heat until hot.
  4. Cooking in batches, add about ¼ cup of batter per fritter/pancake and cook for 2 minutes per each side or until golden brown.
  5. Drain any excess oil off the fritters by placing them on a paper towel, and then serve while still nice and hot.
