Spaghetti with a creamy smoked salmon and thyme sauce

This is an easy, fast and delicious meal, one that is perfect for dinner at the end of a busy work day.  Smoked salmon is one of my favorite types of fish and Costco sells wild smoked Sockeye Salmon from Alaska, in a 2-pack, 8 oz each, for about $16.  This recipe was adapted from our “Three and Four Ingredient” cookbook, I added a couple more ingredients to round out the flavors.

Ingredients
  • 1 teaspoon of butter
  • 1 shallot chopped
  • 1 package (8oz) Costco Wild Sockeye Salmon
  • 2 teaspoons of fresh chopped thyme, plus some for a garnish
  • ½ cup cream
  • 2 tablespoons of cream cheese
  • Kirkland sea salt and fresh ground Tellicherry pepper
  • pasta of your choice (I used a gluten free spaghetti that Costco carries)

Instructions
  1. Prepare your pasta according to the directions, as it is cooking then:
  2. Cut all of the salmon into strips and reserve about a few strips (4-8 total) for topping just before serving.
  3. In a saucepan over medium heat, melt the butter and then add the shallot and fry until soft.
  4. Add the cream, cream cheese, thyme and salmon strips, and cook for 2-3 minutes on low heat. Do not allow to boil.
  5. Season to taste with salt and pepper.
  6. Serve a portion of pasta, spoon some salmon sauce on top of the pasta and then top everything with a strip or two of extra salmon and thyme.
