Simple and Delicious Potato Salad

Fall seems to be galloping towards us so when possible we’ve been taking advantage of the remaining warm days to go for hikes in the mountains. On one long hike the physical activity and fresh air really tired us out so once back home I decided to prepare some light and easy to make items for dinner, including this potato salad. It’s delicious and don’t be afraid to grind on lots of fresh pepper!  Note: For best results cook the potatoes the night before.

Ingredients
  • 5 medium sized potatoes
  • ¼ head of iceberg lettuce, sliced
  • ⅓ cup white onion, sliced into thin half moons
  • 2 Roma tomatoes
  • ¼ cup mayonnaise
  • fresh ground Kirkland pink Himalayan salt
  • fresh ground Kirkland Tellicherry pepper
  • optional: green onion to garnish

Instructions
  1. Add the potatoes into a large pot which is half to three quarters full of water.
  2. Add ½ teaspoon of salt and bring to a boil. Reduce to a simmer and continue boiling until cooked but not mushy.
  3. Allow the potatoes to cool. (Ideally leave them overnight in the fridge.)
  4. Cut the potatoes into large cubes and add to a bowl.
  5. Add the onion, tomatoes, iceberg lettuce and mayonnaise to the bowl.
  6. Season lightly with fresh ground salt.
  7. Season with a good amount of fresh ground pepper.
  8. Optionally garnish with sliced green onion.
  9. The salad is ready to serve immediately.
