Savory Beef Stew

It’s winter time and on such a cloudy, cold day like today, there is nothing more delicious and satisfying than a warm bowl of hearty stew.
This stew is rich in vegetables, low in calories and also has a relatively low fat content.  The preparation is a little time consuming, but on a cold day who doesn’t mind spending a little bit extra time in the kitchen for such a rewarding taste?

Ingredients
  • 1 kg (2lbs) of stewing meat. Costco offers stewing meat at a good price
  • 2 tablespoons wheat flour (for a gluten free version use the corn starch)
  • 2 tablespoons Kirkland Olive Oil
  • 1 large onion, chopped
  • 3 cloves of garlic, chopped
  • 5-6 cups of broth
  • 2 cups carrots, cut into cubes
  • 2 cups chopped potatoes into cubes
  • 1 cup chopped celery stalks
  • 1-2 tablespoons thyme (substitute 1 teaspoon dry for 1 tablespoon fresh, but it won’t taste as good as the fresh thyme)
  • 1 tablespoon tomato paste
  • 3 bay leaves
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons cornstarch or potato flour
  • ¾ cup of frozen peas
  • Kirkland salt and pepper
  • To increase the veggie count, you can also add any of celery or parsnip root and white turnips, all chopped into cubes.

Instructions
  1. Lightly coat the meat with flour and then fry in small batches over high heat with a tablespoon of olive oil. It is important to fry over a high flame and in small batches. Why? Because we want the meat to only sear and create flavorful browning without losing the moisture from the meat. If you put too much meat at once in the pan more moisture comes out at a faster rate than it evaporates, which leads to a steaming of the meat. Not good! So take your time and once all of the meat has been seared, place aside.
  2. Pour the rest of the olive oil in the pan and add the garlic and onions. Fry for 2 minutes and then add the vegetables (except the peas) add back the meat, broth, spices and Worcestershire sauce. Bring to a boil and then simmer over low heat until the meat is tender (about 2 hours)
  3. When the meat is tender, add the peas and season to taste with salt and pepper.
  4. To thicken the stew add the cornstarch or potato flour to about ¼ cup of cold water and mix thoroughly until smooth.
  5. Add to the stew, stirring constantly.
  6. Serve with fresh a nice freshly baked crispy bread such as a baguette.
