Sauteed halibut with walnut butter sauce

Have you ever seen what a halibut looks like?  To me it is one of the strangest and most unappetizing looking fish. It’s really slimy, and as a flat fish it has an odd eye configuration due to the fact that after 6 months of age one of its eyes migrates to the other side. They can also grow to be huge in size, the current record is a little over 500lbs!  But beauty really is on the inside – halibut are absolutely delicious. :) My idea for this halibut dish was to accompany it with some walnuts in a wine/butter sauce and I served it on a bed of saffron mashed potatoes.

Ingredients
  • ½ cup Kirkland walnuts, lightly roasted in a pan
  • 2 filets Kirkland Halibut (you won’t find halibut at a better price, not unless your uncle is a fish monger)
  • 2 tablespoons melted butter
  • 1 teaspoon Kirkland maple syrup
  • 1 egg yolk
  • 2 teaspoons butter
  • ½ cup dry white wine
  • juice from ½ lemon
  • ¼ teaspoon canola oil
  • Kirkland sea salt and fresh ground Tellicherry pepper

Instructions
  1. In a small pot over high heat add the wine and lemon juice and bring to a boil – boil until reduced by 80%.
  2. Turn off the heat, season with salt and pepper and let cool to room temperature.
  3. Add the egg yolk, whip, and heat on low until a foamy consistency is achieved.
  4. While still whipping, slowly add the melted butter, then add the walnuts and syrup. Turn off and cover to keep warm.
  5. In a fry pan over medium high heat, wipe the pan with the canola oil and when the pan is hot add the halibut filets.
  6. Fry the filets for 2-3 minutes or until the side is slightly browned – if the filet is thick, cover the pan with a lid to use the steam to help cook the inside.
  7. Flip the filets, season with salt and pepper, add the 2 teaspoons butter to the pan. Move around the filets on the pan into the butter and continue to fry the filets until they are nicely browned and the fish is cooked.
