Santa’s Almond Cherry Cookies

Christmas is a wonderful time of year but often before we can get the enjoyment of it we need to spend lots of time preparing for it. This is especially true of the foods we eat so when possible I like to make things easier by preparing what I can ahead of time. These Santa’s cookies are refrigerator cookies which can be prepared and then kept in the fridge for up two weeks (or freeze for up to 2 months) before you bake them. They are delicious, Santa will love them!

Ingredients

  1. In a large bowl add the butter and sugar and then mix with an electric mixer until smooth and creamy.
  2. Add the maple syrup, egg, vanilla and almond extract.
  3. Mix again until smooth.
  4. Add the baking powder, almond flour and gluten free flour. Mix everything together with a spoon.
  5. Add the cherries and mix in. (I prefer to use my hands for this part.)
  6. At this point form the dough into two logs, wrap in plastic wrap and place in the fridge for at least two hours. The logs need to become firm.
  7. If you are going to leave the plastic wrapped logs in the fridge for a while, place them into a Ziploc bag.
  8. When you are ready to bake the cookies, pre-heat oven to 375F.
  9. Remove the logs from the wrap and slice into cookies ⅛” to ¼” thick (I prefer thicker.)
  10. On a pan covered with parchment paper, place the cookies about 1-2″ apart.
  11. Bake for 7-10 minutes or until they just start to turn golden on the edges of the cookie.
  12. Remove from the oven and allow to cool for 1-2 minutes before you place them unto a cooling rack.
