My salted caramel chocolate turtles have been one of my most popular desserts so I decided to prepare another treat with salt, caramel and chocolate. This flavor combination really is something special and be warned, it’s very easy to get carried away with these! The tart is so very creamy in texture, looks great, tastes great, is relatively easy to make and works beautifully as a dessert when you have friends over. Here I make 5 mini tarts but you can easily make 1 large tart.

For the crust
  1. Pre-heat oven to 380F.
  2. In a bowl mix the flours, cocoa powder baking powder and butter together. Add the ½ egg, vanilla, maple syrup and water.
  3. Mix until you get a pie crust dough, adding more water if the dough is too dry.
  4. Cover with plastic wrap and place the dough ball into the fridge for 30 minutes.
  5. When the dough is ready, spread it into your tart pan(s). To make it easier you can use a cheese shredder to shred the dough ball and then press with your fingers to create the bottom and edges.
  6. Bake the crust for 10 minutes.
For the caramel filling
  1. Pour the dulce de leche into a small pot and heat on medium high, stirring frequently. Once it starts boiling continue cooking for about 6 minutes. From the time when it starts boiling you must stir it constantly. This is really important, or you may end up burning the caramel.
  2. When ready, pour the caramel over the baked tart. Sprinkle with a bit of fresh ground sea salt.
For the topping
  1. In a pot mix together the chocolate chips, cream and vanilla.
  2. Place the pot on the top of the stove, heat and stir until chocolate is melted and smooth chocolate sauce is created.
  3. Pour the chocolate topping over the caramel and let it set. Sprinkle with fresh ground sea salt before serving.
