Salmon Tacos with Mango Lime Dressing

When thinking of what to prepare for dinner I typically come up with a main course and then add in a side.  However in this case we wanted to have some sweet potato french fries with a chipotle dip and then I had to decide what main dish to have with the fries.  Since french fries are heavier, I wanted to serve it with something light, and settled on a fish taco with a fruit based dressing.   We had salmon in the freezer, some organic mango juice and bell pepper and this tasty taco was the end result.

Ingredients
For the salmon tacos
  • ¼ red bell pepper, cut into strips
  • ¼ yellow bell pepper, cut into strips
  • 2 filets wild Sockeye salmon (available at Costco for an excellent price in individually wrapped and frozen filets)
  • a few slices of onion, cut and separated into half moon strips
  • a few leaves of lettuce (choose a crispy lettuce such as romaine)
  • 2 tablespoons cilantro, chopped
  • ¼ cup corn (I used black beans because we were out of corn – corn is preferable)
  • 4 corn tortillas
  • 1 teaspoon canola oil
  • 2 teaspoons butter
  • fresh ground Kirkland Himalayan pink salt
  • fresh ground Kirkland Tellicherry pepper
  • fresh lime juice
  • optional: chili flakes
For the the mango lime dressing
  • 2 tablespoons cilantro, chopped
  • 4 tablespoons mayonnaise
  • 3 teaspoons fresh squeezed lime juice
  • 6 teaspoons mango juice (I used Happy Planet organic mango juice, available at Costco)
For the french fries
  • Sufficient canola oil for deep frying
  • Organic sweet potato fries, deep fried (I used Alexia Sweet Potato fries available at Costco)
For the chipotle aioli for the french fries
  • 2 tablespoons mayonnaise
  • 1 teaspoon chipotle paste
  • 1 teaspoon smoked paprika
  • 1-2 teaspoons of water (depending on the thickness of your mayonnaise)

Instructions
Prepare the mango lime dressing
  1. With a hand blender, blend all the dressing ingredients together. Set aside. (If you don’t have a blender just mix it, but it won’t be quite as good)
Prepare the chipotle aioli
  1. Mix all the ingredients together. Set aside.
Prepare the tacos and fries
  1. If not already done, slice or otherwise prepare the vegetables for the tacos and defrost (if frozen) the salmon filets. Heat the oil for the deep fryer.
  2. Grind fresh pepper and salt on to the salmon filets.
  3. In a deep fryer, warm your oil.
  4. In a pan over medium heat, add 1 teaspoon of canola oil to the pan and fry the salmon skin side down for 3-4 minutes, depending on thickness.
  5. (While the salmon is cooking, add fries to the deep fryer and cook until done to your desired crispiness.)
  6. Flip the salmon, add the 2 teaspoons of butter to the pan and add a fresh squeeze of lime juice. Swirl around the filets into the butter and fry for 2 minutes.
  7. Flip the salmon back onto the skin side, optionally sprinkle a few flakes of chili onto the salmon. Continue to cook until the salmon is done but slightly pink inside. Once done cut into large squares.
  8. Spread the mango lime dressing on the tortillas, top with vegetables and add the salmon. If you have any leftover dressing simply pour on top of the salmon.
