Raspberry and Dark Chocolate Kisses

Up until recently I had a couple of choices when making chocolate confections. Buy super expensive, high end chocolate or cheaper but much lower quality chocolate. Not anymore. Under the Kirkland brand Costco now offers semi-sweet chocolate chips, with 51% cacao and real vanilla;  the chocolate chips are an unbeatable value. This recipe uses a raspberry puree but all sorts of other fruit fillings could be substituted; when making these I also made some with a blackcurrant filling.  A couple of inexpensive but essential cooking tools will be required to make these kisses. The first is a reusable candy/chocolate form and the other is a decorator’s brush.

Ingredients

Instructions
  1. In a double boiler, melt the chocolate chips.
  2. In a small pot, cook the raspberries and sugar until the juice is released and a soft jam consistency is reached.
  3. Remove from heat and smash the raspberry puree through a fine meshed sieve so as to remove the seeds. Discard seeds.
  4. Add the raspberry puree back to the pot, add the cornstarch and mix.
  5. Re-heat the pot and puree back to a bubbling boil, remove from heat.
  6. Using the decorators brush, dip it in the melted chocolate and then paint the inside of each chocolate mold. Place in the fridge for 1-2 minutes to harden the chocolate.
  7. Repeat brushing with another layer of chocolate, refrigerate until hardened.
  8. Using a spoon scoop out a small amount of the raspberry puree and place into the chocolate mold. How much puree is used will depend on the size of your molds.
  9. Over top of the raspberry, use a spoon to scoop in more dark chocolate until the raspberry puree is covered and the mold is filled.
  10. Place in the fridge to cool and set.
