Quick, Easy, Delicious – Puff pastry tart with cherry tomatoes and mascarpone

I was hosting a party for some girl friends the other day and decided on serving this dish because it’s a nice alternative to having a heavy pizza. It’s also so easy to make, yet comes out so nicely; it’s perfect for a busy host who is trying to get lots done in a short time, yet not sacrifice presentation or flavor.  The measurements for the ingredients will vary largely on how big the tart(s) are that you make, go with what feels right as there is no absolute right answer.

Ingredients
  • frozen puff pastry, thawed
  • cherry tomatoes, cut in half (Costco sells great little blusher tomatoes or cherry tomatoes at a great price)
  • 1-2 teaspoons Kirkland extra virgin olive oil
  • 1-2 tablespoons of sun dried tomato pesto (available at Costco)
  • 1 cup mascarpone cheese (available at Costco)
  • fresh basil

Instructions
  1. Pre-heat oven to 440F
  2. Sprinkle flour on the counter top and then roll the puff pastry out to a thickness of ¼ inch (6mm)
  3. Cut shapes in the size and shape you want (circles, squares, rectangles)
  4. With a knife trace an inner edge (about ¼ to ½ inch from the outside edge) that cuts in approximately half way through the puff pastry
  5. Wipe a baking pan with olive oil and sprinkle lightly with water, then place the puff pastry on the pan
  6. Inside the inner portion of the puff pastry spread the sun dried tomato pesto
  7. Place the cherry tomatoes cut side down onto the pastry over the sun dried tomato pesto
  8. Place the pastry in the oven and bake for 10-15 minutes or until the pastry just starts turning color
  9. Remove from the oven and in-between the spaces where there is no cherry tomato, place blobs of mascarpone cheese
  10. Add back to the oven and bake until the pastry is golden brown in color
  11. Remove from the oven, sprinkle with torn fresh basil and optionally sprinkle with salt and pepper
