Pineapple Curry Salad

This is one of my favorite mayo salads. Exotic and tropical, sweet with a hint of garlic, I don’t know of many other salads like it. Best of all it’s very easy to make it and if you already have cooked rice, it’ll take just a few minutes to prepare. This pineapple curry salad goes really nicely with BBQ chicken and if you have some left overs of each, mix cubed pieces of the chicken into the salad for a great lunch.

Ingredients
  • ¾ cup canned, chunk pineapple
  • ¾ cup canned or frozen corn
  • 1½ tablespoons pineapple juice
  • ¼ teaspoon crushed garlic
  • ¼ teaspoon curry powder (you can add more if you want)
  • 1¼ cup cooked Basmati rice
  • 3 tablespoons mayonnaise
  • fresh ground Kirkland Signature Pink Himalayan salt to taste
  • fresh ground Kirkland Signature Tellicherry pepper to taste

Instructions
  1. Mix all the ingredients together and then season with salt and pepper.
  2. Place into the fridge and let it sit for about half an hour.
