Scrumptious Organic Blueberry Cheesecake

A good friend of ours recently decided to move to Seattle and I wanted to bring a dessert of some kind to her going away party.  We’d recently purchased a bunch of frozen organic and fresh organic blueberries from Costco so it was definitely going to be blueberry based. While there’s lots that can be done with these wonderful berries, cheesecake is always popular so blueberry cheesecake it was!  Note that I made two cheesecakes, one 6 inch, one 8 inch (the 8 inch cheesecake is in the picture). If you want to make a single large cheesecake you will probably require a 10 inch or larger spring-form pan.

Ingredients
For the cheesecake

Instructions
  1. Pre-heat oven to 360F
  2. Melt the butter and mix in the vanilla.
  3. In a bowl, add the ground graham crackers and mix in the butter mixture. It should have a wet sand consistency.
  4. In a 10″ or larger spring form baking pan which has been covered with parchment paper, add and press in the graham cracker mix.
  5. Place in the oven and pre-bake for 10 minutes. Once done allow to slightly cool.
For the cheesecake filling
  1. Using an electric mixer blend the 4 packages of cream cheese together.
  2. Add eggs, one at a time to the cream cheese.
  3. When the mix is nice and smooth and fluffy, add the condensed milk, mix.
  4. Next add the pudding, mix.
  5. Add the mashed frozen blueberries, mix.
  6. When everything is mixed nicely, add the fresh blueberries and mix in by hand with a spoon.
  7. Place the cream cheese mix all over the crust.
  8. Bake for about 1 hour or until the cheesecake is no longer wobbly. Note 1. If you bake in a water bath, raise the oven temperature to 380F. Note 2. If the top starts to turn dark brown, cover with aluminum foil.
  9. Allow the cheesecake(s) to cool for at least 6 hours, or preferably overnight.
  10. Prior to serving, in a bowl add the vanilla to the whip cream and whip with an electric blender.
  11. Top the cheesecake with the whipped cream and decorate with fresh blueberries.
