Sometimes it’s the simple pleasures in life. Our youngest daughter absolutely loves Cookies & Cream flavored ice cream, it makes her so happy.  Almost every time when we go to our favorite ice cream parlor (Mackay’s) she gets cookies and cream as one of the flavors in her cone. One time recently we were on our way to Mackay’s but they were unexpectedly closed; she wasn’t happy that they weren’t open when they were supposed to be.  :)  So later we acquired the ingredients and I made this dessert for her instead. She said it was  “Awesome!” Kids don’t lie.

Instructions
  1. Pour 1 tablespoon of water into a small cup, sprinkle the sachet of gelatin into it and then mix with ¼ cup of boiling water.
  2. Stir well, until the gelatine is completely dissolved. Place into the fridge and let it cool.
  3. From the package of Oreo cookies, take out 18 cookies and blend them in a food processor until it has the texture of sand.
  4. Empty the blended cookies into a bowl and then mix in the melted butter.
  5. Spread and press this mix into the bottom of a square baking pan that has been lined with parchment paper. Put the pan into the fridge and let it cool.
  6. With your hands break the rest of the large cookies from the bag until you get a small chunks. Set aside.
  7. While the crust is chilling, prepare a cream topping by pouring the whipping cream, vanilla, gelatin and sugar into a big bowl.
  8. Whip everything with an electric mixer until a thick cream consistency is achieved. Remove about ½ cup of the whipped cream and set it aside for decoration.
  9. Fold the rest of the whipped cream in with the cookie crumbs.
  10. Spread the topping over the crust and cool again for about an hour, or until the cream is set.
  11. Decorate with reserved cream and mini Oreo cookie.
