Orange & Ricotta French Croissants
What do you do with day old croissants? How about stuff them with orange, ricotta and Philadelphia cheeses and make a French Toast like breakfast out of them! They turned out delicious! If at the end you have leftover French Toast batter, you can always make my Orange Pancakes.

Ingredients
For the French Toast batter
- 2 eggs
- 3 tablespoons whipping cream
- 3 tablespoons fresh squeezed orange juice
- ¼ cup milk
- ½ teaspoon Kirkland pure vanilla
- 1 teaspoon orange zest
For the Filling
- 3 tablespoons Ricotta (available at Costco at about half the price of your supermarket)
- 3 teaspoons Philadelphia cheese (also available at Costco)
- 6 teaspoons orange pulp
- 1½ teaspoons sugar
The rest
- 3-4 croissants
- 2 teaspoons butter
- Kirkland maple syrup and cinnamon to top
Instructions
- Prepare the French Toast batter by adding the eggs to a bowl and gently beating them.
- Add the remaining batter ingredients and mix, set aside.
- In another small bowl, prepare the filling by mixing the filing ingredients together.
- Make a pocket in each croissant by slicing open the sideand fill each with ⅓ of the filling. Try as best you can to close the croissant back up.
- In a large fry pan over medium heat, melt approximately 2 teaspoons of butter.
- One at a time dip the croissants into the French Toast batter, submerging/covering them and then add the croissant to the pan.
- Fry the croissant until golden brown on the underside, then flip and fry until done.
- Serve topped with maple syrup, a sprinkling of cinnamon and optionally with fresh orange slices.
