Don’t these look delicious? They are! I’ve called these mojito squares but they don’t contain any alcohol. What they do contain is oodles of mint, lime and cream goodness and they do happen to go perfectly with a mojito. :) They’re also relatively easy to make and to save time you can prepare both jellos at once.

Ingredients
For the sponge cake
  • 1 egg, seperated
  • ¼ teaspoon Kirkland pure vanilla
  • ¼ teaspoon baking powder
  • 1½ tablespoons sugar
  • 2 tablespoons flour
For the cream filling
  • 2½ cups whipping cream
  • ⅔ of a package of lime jello dissolved in ⅓ cup boiling water (follow the package directions but use only ⅓ cup of water)
  • 1-2 drops mint extract (Use two drops if you prefer it to be more minty)
For the jello topping
  • 1 package of lime jello
  • 1-2 drops mint extract

Instructions
For the sponge cake
  1. Pre heat oven to 390F.
  2. With an electric mixer whip the egg white in a bowl until white, thick and peaks form.
  3. Add the sugar to the bowl and mix in.
  4. Add the egg yolk and vanilla and mix until a nice creamy, fluffy consistency is achieved. This may take a couple minutes.
  5. Using a spoon, sift in the flour and baking powder into the bowl. Slowly and gently mix the flour in a scooping motion until it is mixed in. We don’t want to lose any fluffiness while mixing.
  6. In an 8″ square baking pan lined with parchment paper, pour in the sponge cake batter and spread to all the edges.
  7. Bake for 10-15 minutes or until a toothpick inserted into the cake comes out dry.
  8. Remove from the oven and allow to cool.
For the cream filling
  1. If not already done, dissolve the jello into the boiling water. Allow to cool but don’t allow it to set. You have several options, either place the bowl in a bath of cold water and stir frequently or simply leave on the counter for 30-60 minutes until cooled.
  2. In another bowl add the whipping cream and whip with an electric mixer. Once the cream gets thick, add the cooled jello mix and whip further until everything is mixed together and the cream filling is thick.
  3. Spread the cream filling over the cooled sponge cake and place in the fridge and allow to set.
For the jello topping
  1. Prepare the jello according to the instructions on the package, plus add the 1-2 drops of mint extract.
  2. Again allow the jello to cool until just before it starts to thicken. At this point we spread the jello topping over the top of the cake filling.
  3. Place the mojito square back in the fridge and cool until completely set.
  4. Once the square is completely set, cut into serving sizes of your choice and optionally garnish with fresh mint leaves or grated lime zest.
