Like most families, our family always has a large Christmas feast, chock full of dish after dish of goodness. Often we’re pretty full by the time dessert rolls around, but wait, we can’t miss out on dessert! These Mini Cranberry Tiramisu are the perfect solution – just the right amount of creamy sweet goodness that everyone is sure to be able to fit one in somewhere! For a child friendly version skip the alcohol and just use orange juice.

Ingredients
For the Jam
  • 1 cup of fresh or frozen cranberries
  • 2 tablespoons orange juice
  • 1 teaspoon lemon juice
  • 2 tablespoons sugar

Instructions
For the jam
  1. In a small pot over medium heat, add the cranberry, sugar, orange and lemon juice.
  2. Cook, stirring occasionally until you obtain a jam like consistency. Remove from the heat and set aside.
For the cream
  1. In a bowl mix together the whipping cream, vanilla and maple syrup.
  2. Use an electric mixer to begin whipping it and when cream starts to reach a sour cream like consistency, add the mascarpone cheese and incorporate it fully. Do not over-mix.
  3. In a cup mix together the vodka, juice and triple sec.
For the cookies
  1. Place the cookie crumbs into a small bowl and sprinkle with the orange-vodka mixture (if you’re making a kid friendly dessert, skip the alcohol and use 6 teaspoons of orange juice)
Layer the Tiramisu
  1. Place about 1 teaspoon of cranberry jam on the bottom of a tall shot/dessert glass, add a layer of whipped mascarpone cream, a layer of cookie crumbs, another layer of cream, cranberry, cookies and finish with cream.
  2. Dust with cinnamon and optionally decorate with a cranberry.
  3. Keep the mini tiramisu in the fridge and allow to warm at room temperature 10 minutes before serving.
