If you or somebody you love is a fan of Maltesers chocolate balls, then this is a great looking and fun cake that isn’t difficult to prepare and is chock full of Maltesers goodness. If you want to make things even easier you can use a “box” chocolate cake premix.

Ingredients
For the cake
  • 4 eggs, separated
  • 2 teaspoons baking powder
  • 1 teaspoon Kirkland pure vanilla
  • 1 tablespoon canola oil
  • ¼ cup Rodelle Dutch Dark Cocoa (available at Costco)
  • ½ cup flour
  • ½ cup sugar
  • optional: Baileys coffee cream or other liqueur
For the cream filling and topping
  • 3 cups whipping cream (2 for the cream filling, 1 cup for the whip cream topping)
  • 1½ cups Maltesers (approximately 70)
  • 1 teaspoon Kirkland pure vanilla
For the cake topping
  • Approximately 1 cup Maltesers (depends on how much of the cake you want to cover with Maltesers, I only put them on the top)

Instructions
Prepare the cake
  1. Preheat oven to 400F.
  2. Line the bottom of a round spring form baking pan with parchment paper.
  3. Using an electric mixer, beat the egg whites. Once they start to stiffen add the sugar and continue to mix until peaks are formed.
  4. Next continue to mix and add the vanilla, the oil and egg yolks one at a time. It should almost double in volume so mixing should be done for at least 4-5 minutes.
  5. In another bowl sift together the flour, baking powder and cocoa powder.
  6. Using a spoon, slowly add the flour mixture to the batter in batches. Mix slowly by hand. Once you no longer see any flour in the batter, add a bit more flour mixture. Be careful while doing this, do it in a folding motion so as to not collapse the batter mixture.
  7. Once ready pour the batter into the baking pan and bake for 35 minutes or until a toothpick inserted in the cake comes out dry.
  8. After the cake is done, remove it from the oven and allow to cool.
Prepare the whip cream filling and topping
  1. While the cake is cooling prepare the whip cream.
  2. With an electric mixer, whip the cream with the sugar and vanilla until whipped. Remove ⅓ of it for our topping, the other ⅔ will be for the filling.
  3. Crush the 1½ cups of Maltesers balls (put them in a zip lock and crush them with your fist. We want small chunks, not powder)
  4. Fold the crushed balls into the remaining ⅔ of the whipped cream.
  5. Once the cake has cooled, carefully cut it horizontally into 3 layers.
  6. On the bottom layer, drizzle with the Baileys, then add a layer of half of the Maltesers whipped cream.
  7. Place the middle layer on top, drizzle with Baileys and add the remaining Maltesers whipped cream.
  8. Place the top layer on and coat the sides and top with the ⅓ of regular whipped cream.
  9. On the top layer arrange the Maltesers and place in the fridge until you are ready to serve it. Enjoy!
