When our youngest daughter went to the Katy Perry concert she dressed up in the brightest and most outrageously fun outfit. A lime green skirt, cherry red tank top all book-ended with bright pink stockings and an even brighter pink wig. She looked fabulous! In the theme of pink and Katy Perry, I made this bright neon pink no-bake cheesecake for her to have before the concert. The cake’s appearance really gets people talking, but it all stops once they bite in – then all you hear is “Mmmmmm!”

Ingredients
For the cheese filling
  • 250g mascarpone cheese (1 cup plus a bit)
  • 1 brick Philadelphia cheese, soft (1 brick is about 225g or 8oz)
  • 1 cup whipping cream
  • ½ cup sugar
  • 1 teaspoon Kirkland pure vanilla
  • 53g pink jello (I used raspberry) dissolved into ⅓ cup boiling water (1 Jell-o package is 85g, so use ⅔ of it)
  • drop of pink food coloring
  • optional: fresh raspberries
For the crust
  • ¾ cup gluten free graham crumbs
  • ⅓ cup almond flour
  • 1 teaspoon Kirkland pure vanilla
  • 3-4 tablespoons butter, melted
For the topping
  • 84g (1 package) pink jello dissolved in 1⅓ cup boiling water

Instructions
  1. Start by preparing two bowls of the pink jello liquid.
  2. Dissolve the pink jello (for the cheese filling) into the ⅓ cup boiling water. It must then completely cool, but you need to watch it so it doesn’t start to set.
  3. Dissolve the pink jello (for the topping) into the 1⅓ cup boiling water. Here too it must cool but not set.
For the crust
  1. In a bowl mix all the crust ingredients. It needs to be a wet sand consistency. If it is too dry, add a bit more melted butter.
  2. Line a spring form baking pan with parchment paper and then add the crust mix and press it into the bottom to form a crust.
For the cheese filling
  1. Using an electric mixer whip the cream in a bowl until whipped and set aside.
  2. In a separate bowl use the mixer to blend together the cream cheese, mascarpone cheese, sugar and vanilla until a nice smooth and creamy consistency.
  3. Into the mixed cheese add the cooled jello liquid, 1-2 drops of pink food coloring and mix.
  4. Add in the whip cream and on low speed with your mixer mix everything fully. (If you would prefer a marbled look, just use a spoon to briefly mix in the whip cream.)
For the cake
  1. Optionally place fresh raspberries on the crust.
  2. Pour the cheesecake mixture onto the crust.
  3. Place in the fridge for 7-10 minutes until it starts to set.
  4. Remove from the fridge and add the cooled topping jello mix.
  5. Place back in the fridge until the jello topping sets.
  6. When you are ready to serve it, the best way to cut it is to ensure your knife is placed in hot water before each cut is made.
