Jalapeno Cheddar Bison Burger on a Pretzel Bun

You’ll need to do a few jaw stretching exercises before eating these burgers!  Fresh pretzel buns, thick bison patties and lots of tasty toppings make these burgers look and taste better than anything you’ll ever get in a fast food restaurant.  They are also a whole lot healthier too as bison meat is far leaner than its beef counterpart.  Costco has started carrying 2 packs of 1.25 lb (each) ground bison, antibiotic and hormone free, for $16.99, a great price!  This recipe makes 6-8 large patties.

Ingredients
  • 2.5 lbs ground bison (available at Costco)
  • 1 egg
  • cheddar cheese
  • red jalapeno
  • avocado
  • butter leaf lettuce
  • pretzel buns
  • sweet mustard, ketchup and other condiments of your choice
  • sprouts of your choice
  • Kirkland salt and pepper

Instructions
  1. Crack and briefly whip the egg in a bowl, then add the bison and mix the egg in. (The egg helps ensure the patties stick together nicely and not fall apart on the grill.)
  2. Next add salt and pepper and optionally add some chopped jalapeno pepper.
  3. Break the bison mixture up into 6-8 even portions and form each into thick patties.
  4. Grill the patties over medium heat, placing sliced cheddar cheese, topped with sliced jalapeno pepper, on the patties during the last couple minutes of grilling.
  5. Meanwhile lightly toast the pretzel buns and for a side dish, you can make your own onion rings by purchasing a pre-made onion ring batter mix. Slice the onions to about ¼ thickness, coat with the batter mix and lightly fry in oil until golden brown.
  6. Once the patties are done, add the sweet mustard and other condiments on the bun, place the patty and then top with sliced avocado, butter leaf lettuce and some sprouts.
  7. Serve with the onion rings, do those few jaw stretching exercises and dig in!
