Huevos Rancheros Tostadas

Sunny side up eggs and Mexican flavors are a match made in heaven and most commonly come together in the dish known as Huevos Rancheros. Here in my interpretation of this dish I’ve dropped some of the heavier items such as the re-fried beans, the rice and I’ve gone with a crunchier tostada instead of a tortilla. I call it Huevos Rancheros Tostadas.

  • 2 eggs
  • 2 big tostadas (I used Charras Chipotle flavor Tostadas)
  • 1 tablespoon of chopped spring onion
  • 2 tablespoons chopped cilantro
  • 2 tablespoons of salsa (Desert Pepper makes phenomenal salsas, and other than our own homemade salsa, Dessert Pepper is the only one we regularly use)
  • 2 tablespoons of chopped red bell pepper
  • 2 tablespoons of chopped tomato
  • 1 cup of chopped avocado (we love avocado, use less if you like)
  • Kirkland sea salt
  • fresh ground Kirkland Tellicherry pepper
  • ¼ teaspoon Kirkland extra virgin olive oil
  • 2 tablespoons shredded cheddar cheese (Costco sells 2yr old white cheddar cheese at a great price)

  1. In a bowl mix together the salsa, tomato and bell pepper. Season to taste with salt and pepper and set aside.
  2. In a frying pan over medium heat, warm the olive oil and spread on the pan. Make 2 sunny side up eggs and season very lightly with salt.
  3. Lightly toast the tostada chips and then place each on a plate. On top place the salsa mix, then the egg along with cilantro and green onion.
  4. On the side serve the avocado and cheese.
