Homemade Pistachio Pralines

Last week I was out shopping for some new serving dishes when I wandered into a new store I hadn’t been in before, Oil & Vinegar.  I didn’t find any dishes that really grabbed my attention but they were sampling some fantastically yummy pistachio butter!  Before I had even left the store, I already had an idea on how to use this new treasure – as a homemade pistachio praline.  For a more economical version of these chocolates you can use any semi-sweet or dark chocolate (Costco carries semi-sweet Chipits) and for a real treat go with a dark chocolate from Papa Chocolate, Bernard Callebaut or other high end specialty chocolaterie.

Ingredients
  • 1¼ cup semi-sweet or dark chocolate chips/bars
  • 14 x ½ teaspoon of pistachio butter cream (Pistachio butter cream is more popular than I realized, you should be able to locate it. If not use any other thick nut butter cream such as hazelnut, walnut etc.)
  • 3 tablespoons shelled salted pistachios (Costco sells large bags of salted pistachios at a great price)

Instructions
  1. Pour the chocolate chips into a big stainless steel bowl and put it on top of a pot with hot water (double boiler method).
  2. On low heat melt the chocolate, mixing from time to time. When ready, using a teaspoon, place some melted chocolate into the silicon mold form, just so it covers the bottom.
  3. Put the mold into the freezer for 2-3 minutes to rapidly cool it and let the chocolate harden.
  4. Scoop ½ teaspoon of pistachio butter onto the bottom layer of the chocolate in each mold form.
  5. Place back in the freezer to cool for another few minutes.
  6. Fill the tops with all the rest of melted chocolate and cool in the fridge until the chocolate hardens.
  7. Crush the pistachios and place them into a small saucer/dish.
  8. Use a lighter to apply a very low heat to the top of each chocolate (one at a time) to moisten it ever so slightly, then turn upside down and dip into the crushed pistachios.
