Homemade Good Morning Granola

My husband is big on having either steel cut oats porridge or granola as part of his weekday morning routine. So I decided to make a homemade granola mix and found a recipe in the Comfort Food Diet Cookbook.  I’ve modified the recipe but feel free to mix things up even more with your dried fruit selections as Costco has quite a few dried fruits to choose from.

Ingredients
  • 4 cups Old Fashioned Oats
  • ½ cup roasted, ground flax seed (Costco sells CanMar at a great price)
  • ½ cup crushed Kirkland almonds
  • 2 teaspoons ground cinnamon
  • ½ cup fresh squeezed orange juice
  • ½ cup Kirkland Honey
  • 2 teaspoons canola oil
  • 1 teaspoon Kirkland pure vanilla
  • 1 cup Kirkland dried cherries
  • 1 cup Kirkland dried cranberries
  • ⅛ teaspoon Kirkland sea salt

Instructions
  1. Pre-heat oven to 350F
  2. In a large bowl combine the oats, ground flax seed, almonds, cinnamon and salt.
  3. In a small sauce pan combine the orange juice, honey and oil and bring to a boil, stirring constantly.
  4. Remove the juice from the heat and stir in the vanilla.
  5. Pour the juice mixture over the granola and mix well.
  6. Transfer the granola mix to 1 or 2 large baking pans that has been covered with parchment paper.
  7. Bake for 20-25 minutes or until golden brown. Stir every 10 minutes (this is important!)
  8. Remove from the oven and allow to cool, and store leftovers in an airtight container.
