Halloween Owl Cupcakes

Aren’t these little Halloween Owl Cupcakes adorable? Kids love everything about these: the yummy cupcakes, the Oreo cookies and the smarties. They also have a blast performing their own autopsy on each one as they devour them. The inspiration for this recipe came from a combination of Martha Stewart and one of my favorite Polish food blogs, Moje Wypieki. For the cupcakes you can use this recipe or use another of your choice.

Ingredients
For the cupcakes
  • ½ cup plus 1 tablespoon Rodelle cocoa powder (available at Costco at a great price)
  • 1 cup flour
  • 2 eggs (Costco has organic eggs at the best price)
  • ½ teaspoon baking powder
  • ¼ teaspoon Kirkland sea salt
  • ¾ cup unsalted butter at room temperature
  • 1 cup sugar
  • 1 teaspoon Kirkland pure vanilla
  • ½ cup buttermilk
For the owls
  • Package of Oreo cookies (we’ll need at least 24 cookies, more if any break)
  • Package of Reeses Pieces chocolate candies (we want 24 brown and 12 yellow colored chocolates for the eyes and nose)
  • 6 tablespoons Kirkland semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Instructions
For the cupcakes
  1. Pre-heat the oven to 350F.
  2. In a bowl mix together all the dry ingredients. (except the sugar)
  3. In another bowl use an electric mixer to whip the sugar and butter together until light and fluffy. (approximately 3 minutes)
  4. Add the eggs and vanilla to the sugar butter mixture and whip until it is mixed.
  5. Add half of the dry ingredients and half of the buttermilk to the egg butter mixture. Mix on low speed until mixed.
  6. Add the remaining flour and buttermilk, mix on low speed until mixed.
  7. Fill your paper muffin cups with ⅓ cup of the batter. It should be approximately ⅔ full.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out dry.
  9. Remove from the oven and allow the cupcakes to cool.
For the owls
  1. Using a butter knife, gently separate the Oreo cookies so as to leave one side with the entire cream.
  2. Cut the Oreo cookies without the cream in half (this will be the eyebrows)
  3. In a double boiler, melt the chocolate chips and butter together.
  4. Spread the melted chocolate over the top of the cupcakes and place the eyes, eyebrows and nose onto the top of the cupcakes. (see the pictures)
  5. Allow them to cool for a few minutes in the fridge so that the chocolate hardens.
