Grilled Polenta with a Warm Balsamico Salsa

With the sun going down earlier in the day and the smell of freshly fallen leaves in the air, it’s a great time of year to fire up the BBQ for dinner. An uncommon but great choice for grilling is slices of polenta from a tube – it’s very easy to work with. A container of medley cherry tomatoes from Costco is at the heart of the balsamico salsa and together they form a light and very tasty side dish. Try it served with my husband’s herb crusted filet mignon! (recipe coming soon)

Ingredients
  • ½ polenta tube, cut into 1 cm thick pieces (You should get about 10 slices)
  • Kirkland sea salt
  • fresh ground Kirkland Tellicherry pepper
  • Kirkland extra virgin olive oil for brushing
  • 2 tablespoons Kirkland balsamic vinegar
  • 2 cups cherry tomatoes, sliced in half (Costco sells cherry and blushers)
  • 5 teaspoons Kirkland shredded Parmigiano Reggiano
  • 2 cloves garlic, sliced
  • 1½ teaspoons fresh rosemary, chopped
  • pinch of dried basil
  • pinch of dried oregano
  • 1 teaspoon Saskatoon berry jam (or any other black berry type jam)
  • 1 teaspoon Kirkland extra virgin olive oil

Instructions
  1. Brush the polenta with olive oil and sprinkle with salt. Grill on your BBQ for 5-6 minutes per side or until nicely grilled.
  2. While the polenta is grilling, in a large pan over medium heat add the 1 teaspoon of olive oil and the garlic. Fry for 30 seconds.
  3. Add the tomato halves and fry for 1-2 minutes.
  4. Add the balsamic vinegar, jam and herbs and fry until the balsamic vinegar thickens.
  5. Sprinkle with salt and pepper to taste.
  6. Once the polenta is finished grilling, sprinkle ½ teaspoon of Parmesan cheese on each and top with the balsamico salsa.
