Gluten Free Oatmeal Chocolate Bars

Delicious! These are a healthy way (although quite high calorie) to satisfy your sweet tooth.  They consist only of the natural ingredients of oatmeal, honey, peanut butter, dried cranberries, coconut  and chocolate and are completely gluten free.  Once prepared I suggest that you cut off a piece and immediately hide the rest in the fridge, because they are sooooo addictive. :)

Ingredients
  • ½ cup peanut butter (hazelnut butter is also fantastic)
  • ¼ cup honey (Costco sells Grade A pure honey at typically 25-50% less than a supermarket)
  • ¼ cup coconut oil (you can use regular butter, but then the healthy part of this recipe starts to disappear!)
  • 1 and ¼ cup oatmeal
  • ¾ cup semi-sweet chocolate dots or crushed chocolate
  • ⅓ cup dried cranberries (or other fruit – Costco sells lots of dried fruit at great prices)
  • you can also add some nuts

Instructions
  1. In a saucepan over medium heat, combine the peanut butter, honey and coconut until a thick mass is created.
  2. Remove from heat and then add in the rest of the ingredients.
  3. Once everything is combined, pour the mixture into a mold/baking pan lined with parchment paper and leave to cool.
  4. Once the mixture has cooled (you don’t want to put anything really hot into the fridge) go ahead and put the bar into the fridge and cool further for about an hour.
