Typically our family prefers real saucy pastas. A hearty bolognese sauce, a simple tomato and basil sauce, a creamy alfredo sauce. This dish certainly isn’t sauceless, but it sure looks that way. The key is it has just enough sauce and the flavors of each of the ingredients really stand out and make it a nice change-up of pace pasta that is very enjoyable. I served it with our Costco gluten free spaghetti and this recipe is a modified version of one of Martha Stewart’s.

Ingredients
  • ¾ pound GF spaghetti (GF Giovanni Panzani is available at Costco, or substitute your favorite spaghetti type)
  • 2 tins of white tuna (available at Costco – not a huge savings, but good quality)
  • 2 tablespoons capers, rinsed
  • 3 cloves garlic, thinly sliced
  • ¼ teaspoon chili flakes
  • 1 lemon for 1 teaspoon grated lemon zest and 1 tablespoon fresh lemon juice
  • 2 tablespoons Kirkland extra virgin olive oil
  • ¾ cup Italian parsley, chopped
  • ½ cup Kalamata olives, sliced (available at Costco at a great price)
  • fresh ground Kirkland Tellicherry pepper

Instructions
  1. In a large pot of boiling water, cook your pasta according to the directions (go for al dente). When done drain and reserve 1½ cups of the pasta water.
  2. In a large fry pan over medium heat, add the tuna and garlic and cook until the garlic very lightly browns. If the tuna you used was packed in water, add a bit of olive oil here.
  3. Add the capers and chili flakes and fry for a further 30 seconds.
  4. Add 1 cup of the reserved pasta water and bring the sauce to a simmer.
  5. Add the cooked pasta and continue to simmer until the liquid is reduced to a sauce that coats the pasta – toss a few times to coat all the spaghetti.
  6. Remove from heat and add the lemon juice, the zest, the oil and parsley. Season with pepper.
  7. Add the remaining pasta water a little bit at a time until the pasta is evenly coated.
  8. Top with a few slices olives.
