Frittata di bietole – Swiss chard frittata

This frittata is an eye pleasing, nutritious and delicious way to start your morning. Our kids aren’t huge fans of it, but not many kids are fans of steamed swiss chard. This recipe has been modified from a similar recipe in my Flavors of Tuscany cookbook.

Ingredients
  • 1 pound swiss chard, trimmed
  • 6 eggs
  • Kirkland sea salt and fresh ground Kirkland Tellicherry pepper
  • ½ cup grated Kirkland Parmigiano Reggiano
  • 2 tablespoons + 2 teaspoons Kirkland extra virgin olive oil
  • ½ cup mushrooms, sliced
  • 2 tablespoons shallots or onions, chopped
  • optional: fresh sliced heirloom tomato to top

Instructions
  1. Steam the swiss chard for approximately 10 minutes or until well cooked.
  2. While the swiss chard is steaming, saute the mushrooms and onion in the 2 teaspoons of olive oil until done and then set aside.
  3. Chop the swiss chard and place into a bowl, then drain any liquid that has come out.
  4. In a bowl beat the eggs and season with salt and pepper, and stir in the Parmesan cheese, swiss chard and mushrooms and onion.
  5. In a large fry pan over medium heat, warm the oil and then when hot add the egg mixture and cook for 5 minutes until the underside is browned.
  6. To turn the frittata place a large plate over it, turn them over until the frittata falls into the plate. Then slide the frittata back into the pan and cook for a few more minutes until done.
  7. Optionally add fresh sliced heirloom tomatoes on top
