Fried crepes with fresh fruit and whip cream

As a child in Poland I ate crepes so many times that I think I’ve reached my fill for a lifetime.  However my husband and our children love them and they are quick to make even on a weekday when everyone is in a rush to get out the door for school and work.   Often I’ll make more than what we are going to use as they can easily be frozen and later re-used for fried crepes, which is what this recipe is for.

Ingredients
  • Fresh fruit toppings of your choice
  • ½ cup whipping cream
  • ½ teaspoon Kirkland pure vanilla
  • 1 teaspoon sugar
  • Kirkland maple syrup
  • 10 frozen crepes from your freezer. If you don’t have any crepes, you can always make a fresh batch
  • 2 teaspoons vegetable oil for frying
For a fresh batch of crepes
  • 2 cups milk
  • 1 cup flour
  • ½ teaspoon Kirkland pure vanilla
  • 1 teaspoon sugar
  • 2 eggs
  • pinch of salt

Instructions
If you need to make a batch of fresh crepes
  1. Mix together all ingredients for the crepes until completely smooth, then set aside for a few minutes.
  2. Over medium high heat, spray a pan with vegetable oil, or quickly wipe with a paper towel that has oil on it, and then pour enough batter into the pan to just cover the bottom. You’ll need to lift and tilt the pan at different angles to get the batter to smoothly and thinly cover the bottom. Flip each crepe once when the edge starts to crinkle/crumble, meaning the crepe has set. I prefer to use my fingers to flip the crepe but you can use a wide flat kitchen spatula. Remove and stack the crepes
Prepare the fried crepes
  1. Allow the crepes to defrost at room temperature (if using frozen)
  2. Prepare your whip cream by adding the whipping cream, vanilla and sugar into a bowl and blending with an electric blender until whipped
  3. Stack and then cut the crepes, first in half, and then in strips
  4. In a large pan over medium high heat, add the oil to the pan and then add the strips and fry until crispy on the edges
  5. Serve a heaping pile of the fried crepes topped with maple syrup, the whip cream and fresh fruit
