French Inspired Fennel and Orange Salad

Magnifique! This French inspired fennel and orange salad recipe has been adapted from “The Essential Mediterranean Cookbook”.   It’s fairly easy to prepare, and while the cookbook’s recipe was ok, I decided to fry and not roast the fennel, and mine adds some roasted almonds on top.  It’s a lovely salad that is tasty and relatively low in calories.

Ingredients
  • ½ fennel cut into thin half moons
  • 3 oranges (for 2 of them, section and remove the skin and membranes, the 3rd will be for juice)
  • ½ small onion, cut into thin half moons
  • a handful of Kalamata olives, cut into slices
  • 1 tablespoon chopped parsley
  • ½ tablespoon chopped mint
  • ½ teaspoon Kirkland honey (Kirkland’s honey is Grade A and is sold at an incredibly good price)
  • 2 teaspoons Kirkland extra virgin olive oil
  • 2 tablespoons orange juice
  • handful of roasted sliced almonds (Costco has started to carry sliced almonds)

Instructions
  1. In a frying pan over medium heat, warm one teaspoon of olive oil, then add the fennel and fry for about 10 minutes or until soft.
  2. In a large bowl mix the orange segments, onion, mint, parsley, olives and fennel.
  3. In a small bowl mix together the remaining 1 tsp of olive oil, orange juice and honey and then pour it over the orange salad mixture.
  4. Serve the salad onto plates and sprinkle with the roasted sliced almonds.
