Cooking for my blog is lots of fun, but when it comes to sampling and eating the results, well those calories have to go somewhere! Add in having a sweet tooth and it can be easy to get carried away. So even with a regular workout regimen it’s important for us all to make sure the foods we eat are as healthy as can be.  That’s why I came up with this recipe – to have something delicious that satisfies a sweets craving but also be really quite healthy.  I call these cookies “Free Cookies!” because they are GF, and egg and sugar free. Vegan in fact. If you’d also like nut free you can switch the roasted hazelnuts for chocolate chips.

Ingredients
  • ½ avocado mashed
  • 1 tablespoon Kirkland maple syrup
  • ¼ cup hazelnut butter
  • 1 tablespoon cocoa powder
  • 2 tablespoons chia gel (Costco sells C&F Chia seeds – to make a gel mix 1 tablespoon dry chia seeds with 1 cup of water, mix and wait 10 minutes)
  • 3 tablespoons coconut palm sugar
  • ¼ cup hazelnuts, roasted and chopped (Costco sells nuts at a fabulous price)
  • ¾ teaspoon baking powder
  • ½ cup oat flour (only oats)

Instructions
  1. Pre-heat oven to 350F
  2. Mix all the ingredients together until smooth.
  3. Wet your hands and then scoop up a small amount of cookie batter and shape into a ball the size of a walnut.
  4. Place the balls on a baking pan which has been covered with parchment paper.
  5. Flatten the ball with your hand and place into the oven.
  6. Bake at 350 for 20 minutes
