This is a great alternative for people on a low carbs diet, or for people who want gluten free alternatives.  It works as both an appetizer or main course item and is a great party dish. The recipe is not complicated at all so everybody should be able to make it.

Ingredients
  • 1 medium sized eggplant, sliced into 1cm thick slices
  • 4-6 teaspoons of sun dried tomato pesto (Costco carries good pestos)
  • ¼ cup mascarpone cheese (Available at Costco)
  • 12-16 cherry tomatoes, cut in half (Costco typically carries both cherry tomatoes and tasty little blusher tomatoes)
  • mozzarella cheese
  • fresh basil

Instructions
  1. Pre-heat oven to 350F
  2. Sprinkle each slice of eggplant with salt and let it drain for 20 minutes. Then rinse and dry with a paper towel.
  3. Arrange the eggplant slices on a baking rack, spread the pesto and marscapone cheese on each and then cover with mozzarella cheese and cherry tomatoes. Sprinkle with half of the basil.
  4. Bake the eggplant slices until cheese melted.
  5. Sprinkle with the rest of fresh basil and black pepper.. serve hot.
