Fried eggs in shells - great for Easter

  • 3 eggs (Costco now carries organic eggs at a great price)
  • 1 heaping tablespoon of chives, chopped
  • 1 tablespoon of parsley, chopped
  • 3 teaspoons of butter
  • Kirkland sea salt and fresh ground Tellicherry pepper
  • 1 tablespoon of bread crumbs
  • optional salad greens for garnish
  1. Boil the eggs for 11 minutes, drain from the water and let them cool.
  2. This is the tricky part. Without peeling the eggs use a very sharp knife (unless your straight edge knife is super sharp, a serrated knife may work best) and cut the eggs in half lengthwise. Scoop out the hard boiled eggs into a bowl and save the shells.
  3. Crush the eggs with a fork and add the parsley, chives, 2 of the teaspoons of butter. Season to taste with salt and lots of black pepper.
  4. Mix everything very well so as to create a smooth egg salad. When ready, fill the egg sells with the egg mixture, lightly pack and then dip the top in bread crumbs and set aside.
  5. Heat the remaining 1 teaspoon of butter on a frying pan, arrange the eggs cut side down on the pan and fry until the bread crumbs reach a golden color.
  6. Serve warm, optionally with some salad greens.
