In a large pot of boiling, salted water, cook your potato cubes. They will be just right when they pierce easily with a fork, but we don't want them to be mushy. Drain and allow the potatoes to cool completely. (Place them in your fridge if you are in a rush.)
In another pot, boil your eggs. Once done, cool them down completely with cold water and ice, peel and then cube.
In a bowl, mix together all the ingredients.
Serve your potato salad in one large bowl or for a fancier presentation, in small serving plates.
Optionally dust with cayenne pepper.
