Fancy Ricotta Pancakes

Ingredients
  • 2 cups ricotta cheese (Costco sells Saputo ricotta cheese at half the price of supermarkets-$6.99 per kg versus $6.99 for 500g)
  • ½ cup milk
  • 2 large eggs (separated into yolks and whites)
  • ⅞ cup of flour (100g) - simply measure a cup of flower then remove 1 tablespoon
  • 1 tsp baking powder
  • 2 tsp vegetable oil
  • 2 tsp sugar
  • 1 tsp Kirkland pure vanilla
  • icing sugar and fresh fruit to top
Instructions
  1. In a large bowl mix together the ricotta cheese, egg yolks, sugar, vanilla and milk. Add oil and again stir.
  2. In a second bowl use an electric mixer to whip the egg whites until peaks are formed.
  3. Carefully add the whipped egg whites to the ricotta batter by folding them in gently with a spatula.
  4. Place a large (preferably non-stick) frying pan on medium heat and once it is hot lightly spray/coat with vegetable oil. Test to ensure the pan is ready (water droplets should bounce off the pan) and then use a ¼ cup measure to scoop batter out of the bowl into round dollops on the pan.
  5. Fry each side until a nice light brown color forms. (Unlike traditional flour only pancakes these won't have "disappearing bubbles" to indicate when the first side is done. Instead use a spatula to lift up the edges to check the color and know that when done they will not be dry all the way through - instead they will remain slightly moist in the middle.)
  6. Remove from the pan, serve and finish off the pancakes by giving them a light dusting of icing sugar (using a sieve to dust the pancakes works well) and then top with fresh fruit.
