Simple and Delicious Potato Salad

  • 5 medium sized potatoes
  • ¼ head of iceberg lettuce, sliced
  • ⅓ cup white onion, sliced into thin half moons
  • 2 Roma tomatoes
  • ¼ cup mayonnaise
  • fresh ground Kirkland pink Himalayan salt
  • fresh ground Kirkland Tellicherry pepper
  • optional: green onion to garnish
  1. Add the potatoes into a large pot which is half to three quarters full of water.
  2. Add ½ teaspoon of salt and bring to a boil. Reduce to a simmer and continue boiling until cooked but not mushy.
  3. Allow the potatoes to cool. (Ideally leave them overnight in the fridge.)
  4. Cut the potatoes into large cubes and add to a bowl.
  5. Add the onion, tomatoes, iceberg lettuce and mayonnaise to the bowl.
  6. Season lightly with fresh ground salt.
  7. Season with a good amount of fresh ground pepper.
  8. Optionally garnish with sliced green onion.
  9. The salad is ready to serve immediately.
