Pancake Cake Pops

  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 egg
  • 1 cup buttermilk or liquid plain yoghurt
  • 1 teaspoon Kirkland pure vanilla
  • 1 tablespoon butter, melted
  • 1 tablespoon water
  • ¼ cups Kirkland semi-sweet chocolate chips
  • 3 tablespoons sugar
  • Kirkland maple syrup for drizzling
  1. In one bowl combine the flour, baking powder/soda and sugar and mix.
  2. In another bowl combine the egg, yoghurt, melted butter, water and vanilla. Mix.
  3. Add the dry ingredients into the wet, add the chocolate chips and stir just until everything is combined. Don't over stir to the point where it is smooth.
  4. Spray or wipe the cake pop maker with a bit of canola oil, scoop a full teaspoon of batter into each mold, close the lid and bake for 2-3 minutes, or until golden brown. Our machine is pretty cheap, so part way through I noticed the bottom half of the balls were getting more cooked so I flipped them.
  5. Test one of the first cake pops to ensure it is fully cooked and so that you know how long they take on average to cook.
  6. Serve drizzled with maple syrup.
