Wild Rice & Orange Salad

For the salad
  • 3 cups cooked wild rice (wild rice typically takes 30-60 minutes to cook so plan accordingly)
  • ¼ cup Kirkland dried cherries or cranberries
  • ¼ cup Kirkland pine nuts, roasted
  • ¼ cup chopped mint
  • 2 tablespoons green onion, chopped (include white parts)
  • Kirkland sea salt and fresh ground Kirkland Tellicherry pepper
For the dressing
  • 1 tablespoon Kirkland pure maple syrup
  • 1 tablespoon of orange zest
  • 2 tablespoons fresh squeezed orange juice
  • 2 teaspoons Dijon mustard
  • ¼ cup Kirkland extra virgin olive oil
  1. In a small bowl whisk together all the ingredients for the dressing and set aside.
  2. In a large bowl mix together the rice, cherries, pine nuts, mint and spring onion.
  3. Pour the dressing over the salad, give it a good stir and season with salt and pepper to taste.
